dinner rollsDinner Rolls

Ingredients

1-1/4 cup half and half
1/4 cup water
2 tablespoons melted butter
2-tablespoons honey
1-tablespoon active-dry yeast
3-1/2 to 4 cups all-purpose flour (found that just a bit more than 3 cups was sufficient
1 teaspoon fine sea salt
extra melted butter for brushing on top

Instructions

Mix the honey and yeast in the 1/4 cup of warm water to proof the yeast.
Warm the half and half in a microwave until it is 100-110˚
Once the dough is ready, take it out, grease the bowl and return dough and cover to rise. Original recipe said to let it rise for 15 minutes; we let it go for 20-25 minutes and even then it didn't seem that the dough had expanded.

Grease a 9x13 in baking pan.

Divide the dough into thirds (use a scale) and then the thirds by four. You should end up with 12 pieces.
Form the rolls and place into the pan.
Brush with the melted butter.
Cover and let the dough balls rise for "an additional 15-20 minutes". Our kitchen may not have been warm enough; we needed more time.
While the rolls are rising, heat the oven to 400 degrees.

Bake for 15 minutes , or until the rolls are lightly golden brown on top and cooked through.
