GARDEN SPIRAL SALAD

 

1-    16 oz package pasta spirals ( colored)

cup sliced hard salami, cut into strips

cup pepperoni, cut into small pieces

1/3 cup green pepper, coarsely chopped

1/3 cup thinly sliced red onion rings

1 tbsp fresh parsley, chopped

cup Provolone cheese, cubed

1/3 cup black olives, sliced ( small can)

to 1 cup Italian herb salad dressing

Salt and pepper to taste

(original recipe called for 1-cup cucumber, peeled and coarsely chopped, as well as 2 ripe tomatoes, peeled and chopped) Also, adjust amounts as desired.

 

 

Cook spirals in 4 quarts of boiling water according to directions, until just tender. Drain and rinse with cold water to cool. Combine with remaining ingredients. Chill. Toss with dressing when ready to serve. Add salt and pepper to taste.
