Black-and-White Summer Bean Salad

A sweet, just-picked tomato is key to this refreshing salad. If none look great, use naturally-sweet grape tomatoes instead.

Ingredients

    * 1 cup canned white beans, drained and rinsed
    * 1 cup canned black beans, drained and rinsed
    * 1 large tomato(es), diced
    * 1 small onion(s), diced
    * 1 medium celery, stalk, diced
    * 1 Tbsp white wine vinegar
    * 2 Tbsp parsley, Italian, minced
    * 1/8 tsp table salt, or more to taste
    * 1/8 tsp black pepper, or more to taste

Instructions

    * In a large bowl, combine beans, tomato, onion and celery. Gently stir in vinegar and sprinkle with parsley; season to taste with salt and pepper. Yields about 1 cup per serving.

Notes

    * A tablespoon of capers is a piquant addition to this recipe. We recommend the tiny nonpareil capers that are firm and slightly crunchy.

Martha Stewart Living, June 2007,  had a similar recipe using two cans cannellini beans, 1/2 pound roma tomatoes diced, 1/2 cup basil leaves torn into 1/2" pieces, 1/4 cup olive oil and three garlic cloves. The oil was used to saute the garlic.

Some roasted corn might also be a good addition
