Easy Fried Rice


˝ -lb   chopped chicken  (three chick breasts)

2 Tbsp soy sauce

2 Tbsp grated fresh ginger (peeled)

1 Tbsp rice wine vinegar

1 tsp sugar

1 medium onion diced into ˝-inch pieces

4 Tbsp olive oil

1 teaspoon salt

˝ teaspoon black pepper

10 oZ frozen peas and carrots

6 cups long-grain cooked rice  (That’s a bunch) make up enough for four.

Combine chicken, soy sauce, ginger, vinegar and sugar; stir to combine.

Heat wok; add oil; add onion and cook, stirring about 3 minutes until it begins to brown. Add meat mixture, sat and pepper and stir another minute until chicken is almost cooked through. Add peas and carrots and cook to heat through. Add rice and stir. Add 3 tablespoons of water or chicken broth and continue to cook until rice is heated through.

Scramble egg in skillet until done; add to above.


One recipe called for  fried rice seasoning..  look for it.  add 1/3 to ˝ of the packet.

Green onions can be used instead of onions.
