1 T olive oil
1-2 t minced garlic
1 c chopped onion
1 (14.5oz) can artichoke quarters, drained and chopped
2 t Italian seasoning
2 (14.5oz) cans stewed Italian style tomatoes
1 (3.8oz) can sliced black olives, drained
1 (8oz) pkg pasta, cooked and drained
1 (4oz) pkg crumbled feta cheese

Heat olive oil in large skillet. Stir in garlic, onions, artichoke pieces and Italian seasoning. Stir in tomatoes with juices; stir and bring to a boil. Cook until mixture begins to thicken slightly. Stir in olives. Reduce heat and simmer while pasta cooks. Toss sauce with pasta and sprinkle with feta cheese. Yield: 4-6 servings.
