2 c graham cracker crumbs

1/4 c sugar

1/4 c butter or margarine, melted

3 (8-ounce) packages cream cheese, softened

1 1/4 c sugar

6 eggs

1 (8-ounce) container sour cream

1/2 c Key lime juice

1 T grated lime peel

Strawberry Sauce

Directions: Combine crumbs, sugar and butter in small bowl, mixing completely. Firmly press into bottom and 1-inch up sides of a buttered 9-inch springform pan. Bake crust at 350F for 8 -10 minutes; let cool in pan. Beat cream cheese with electric mixer, gradually adding sugar; add eggs and beat to combine. Stir in sour cream, limejuice and lime peel. Pour batter into prepared crust. Bake at 325F for 1 hour or until set. May choose to open oven door and let cool for 15-20 minutes. Remove from oven and run a knife around edge of pan to release sides. Cool in pan and cover and chill in refrigerator. Serve with Strawberry Sauce. Yield: 1 (9-inch) cheesecake.

Strawberry Sauce:

1 (12-16-ounce) package frozen, sweetened strawberries, thawed

2 t grated lime peel

Directions: Mash strawberries and stir in lime peel. Yield: 2 cups.
