Broccoli & Mushroom Quiche
This was a throw-together designed to use the seven egg yolks left over from the Sawdust Pie.
One Mrs. Paul’s Deepdish pie crust
seven egg yolks covered with enough milk to keep from drying out.
Box of frozen chopped broccoli, cooked
4.5 oz jar of sliced mushrooms, drained and chopped
small onion chopped (about ¾ cup, or what ever looks good)
1-1/2 cups grated cheddar cheese
½ teaspoon salt. Grated black pepper
Sauté onion & mushrooms in olive oil. Add to beaten yolks. Mix in other ingredients. Pour in pie crust. Bake at 350 for around 30 min or set.
For a throw-together, this turned out rather well..
Sandy says to try a little red pepper next time..
