1/4 cup selfrising flour

1/2 tsp salt

1/2 tsp baking soda

1-1/2 cups yellow selfrising cornmeal

2 eggs

3/4 to 1 cup buttermilk

2 tablespoon finely chopped onions

1 tsp finely chopped garlic-- we didn't use this

Beat the eggs, add salt, soda, buttermilk, onions flour and cornmeal. Stir until well mixed.

By the teaspoon full drop batter into hot oil, 2 to 3 " at 375 deg. Deep-fry 4 or 5 at a time, turning frequently with a slotted spoon for about 3 minutes, or until golden brown. Transfer to paper towels to drain.   made around 18
