Raisin Bran Muffins

 

5 cups flour†††††† 2 tsp salt†††††††††† 2 cups sugar†††† 1 tsp cinnamon†††††††††††††

1 tsp nutmeg†††† 1- 1&1/2 cups chopped pecans†† 1 cup oil††††††††††† 4 eggs

3 tsp baking soda††††††††† 1 quart buttermilk†††††††††† 15 oz pkg Raisin Bran

 

Mix all ingredients in large bowl. Stir to moisten - donít stir again !

Spoon 1/2 full in muffin tins. Bake at 400 deg for 15 to 20 minutes.

 

Note: Batter will keep for six weeks. It will get very thick, but do not thin
