SNAPPY CHEESE WAFERS
1 1/4 cups enriched self-rising flour*
2 cups shredded Cheddar cheese
1/2 cup butter
1 teaspoon Dijon-style mustard
1/2 teaspoon hot pepper sauce
Measure flour and set aside. Combine cheese, butter and seasoning. Work in flour with hands until dough forms into a ball. Form into a 12 inch roll and wrap in wax paper. Chill for 2 hours. Slice 1/4 inch thick and place on ungreased baking sheet. Bake in preheated 350 F oven 10 to 12 minutes or until slightly brown. Remove immediately and cool on wire rack. Serve plain or with your favorit dip. Roll may be frozen. To serve, thaw for 10 minutes prior to baking.
* spoon flour into dry measuring cup; level, do not scoop
Note: if all-purpose flour is used, add 1 1/2 teaspoons baking powder and 1/2 teaspoon salt to flour.
